The annual meeting of the "Development of Intelligent Equipment for Traditional Chinese Staple Foods and Dishes" project under the 14th Five-Year National Key R&D Program was successfully held.

Recently, the annual meeting of the project “Development of Intelligent Equipment for Traditional Chinese Staple Foods and Dishes”, a key initiative under the “Science and Technology Support for Food Manufacturing and Agricultural Products Logistics” priority area of the 14th Five-Year National Key R&D Program, was successfully held.
Led by Jiangnan University, the project encompasses five core sub-projects. Among them, the sub-project titled “Development of Key Technologies and Equipment for Sterilization and Quantitative Packaging of Staple Foods and Dishes” is jointly undertaken by China National Packaging and Food Machinery Corporation, Guangdong Kenwei Intellectualized Machinery Co.,Ltd., and Jiangnan University.
The meeting brought together project leaders, sub-project coordinators, researchers, and industry experts from the participating organizations to discuss and plan future development strategies.

The project "Key Technology and Equipment Development for Bacterial Reduction and Quantitative Packaging of Staple Foods and Dishes", as a critical component of the National Key R&D Program, aims to overcome the core technical challenges in quantitative packaging of staple foods and dishes, promote scientific and technological innovation and competitiveness of China's quantitative packaging industry to a new level, and lay a solid foundation for the high-quality development of the industry. Aiming at the challenges such as the scarcity of special equipment for filling and packaging Chinese dishes and the insufficient automation and continuity of industrial equipment, the project focuses on key technical fields such as rapid cooling, quality control, precise filling, and quantitative packaging. In this process, Guangdong Kenwei Intellectualized Machinery Co.,Ltd.has played a vital role.

In the project research, Guangdong Kenwei not only participated in the study of various filling methods but also assisted in constructing a dynamic precise filling model for solid-liquid mixed materials. Through algorithm optimization, anti-breaking and anti-sticking design, improvement of online cleaning solutions, and digital collaboration of multi-variety quantitative packaging, the company successfully developed a weighing network module and a Scada system, innovatively developed core equipment, and established an intelligent equipment technology system for filling and packaging.

The project takes vegetable-based, meat-based, and meat-vegetable mixed dishes as research objects, deeply explores the new mechanism of bacterial reduction through the coupling of plasma-activated water and superheated steam, develops multi-physical-field coupling bacterial reduction technology, constructs an accurate shelf-life prediction model, broadens the sterilization range, and effectively extends the product shelf life. At the same time, for various types of dishes such as pickled brine, stir-fried, fried, baked, and soup-based dishes, sensory evaluation and mathematical fuzzy comprehensive evaluation methods are used to analyze the internal relationship between quality sensory evaluation indicators and physical-chemical indicators, establish a scientific quality evaluation system and rapid evaluation methods, and optimize processes and equipment such as cooling, modified atmosphere packaging, and vacuum packaging. In this process, the customized automatic quantitative weighing and packaging system solutions provided by Guangdong Kenwei Intellectualized Machinery Co.,Ltd. have provided strong support for the innovation of core packaging technology and equipment.

In addition, the project has achieved major breakthroughs in key technologies and core equipment such as precise filling, color fixation and quality preservation, multi-variety quantitative packaging, and coupled bacterial reduction, and has carried out joint demonstration applications.
